Document workaround for datetime encoding #437
Description
Should we include any test or documentation about the xarray method of datetime encoding @sharkinsspatial @TomNicholas ? Perhaps as a separate issue since it's not directly related to this PR, apart from being an approach to get around the current zarr-python datetime/timedelta data type limitation.
