  1. Revert SDK and IBC documentation changes 

    Remove all SDK and IBC documentation to keep only EVM docs:
- Delete docs/sdk/ and docs/ibc/ directories completely
- Update docs.json navigation to only include EVM dropdown
- Update versions.json to only track EVM product versions
