How to use material symbols in AppMenu.tsx

I am unclear how I would use material symbols with a menu icon in AppMenu.tsx
For example:

const model: MenuModel[] = [
    {
      icon: '',
      label: 'Accounting',
    }
]

In client only page :

      Import ArrowDropDownIcon from '@mui/icons-material/ArrowDropDown';
      import { Dropdown } from 'primereact/dropdown';
      ....
     <span className='flex pi pi-search mb-3'>search</span>
    
     <span className='flex ArrowDropDownIcon mb-3'>Arrowdown</span>
      
     <span>
        <Dropdown
          dropdownIcon={(options: any) => (
            <ArrowDropDownIcon {...options.iconProps} />
          )}
        />
      </span>

The pi-search and DropDown show the icon. Using the classname to reference ArrowDropDownIcon does not work. MenuModel used in AppMenu only accepts a string, and no icon is displayed.
How do I use a Material Icon with MenuModel?
