We will have to perform a similar update in WordPress core: It should be less painful because I don't see |

Tested, seems to work as expected, nothing breaks.
I love the simplification in some parts of the webpack.config file too 👍

Description
Prerequisite to webpack 5 upgrade.
V6 is the last version that works with webpack 4 and it has several breaking changes as noted in:
https://github.com/webpack-contrib/copy-webpack-plugin/releases/tag/v6.0.0
How has this been tested?
npm run buildnpm run devBoth commands work as before.
