## Summary
- advance cuPyNumeric to `26.05.00` after cutting the `26.03` release
branch
- rotate docs switcher to add `26.05` and make it the preferred release
- update cross-repo version metadata and Python package dependency pin
for Legate `26.5.*`

- `VERSION`: `26.03.00` -> `26.05.00`
- `docs/cupynumeric/switcher.json`: add `26.05`, move `preferred` from
`26.03` to `26.05`
- `cmake/versions.json`: `packages.legate.version` -> `26.05.00`
- `scripts/build/python/cupynumeric/pyproject.toml`: `legate==26.3.*` ->
`legate==26.5.*`
