[Tracking]: react-element-to-jsx-string maintenance/replacement

Problem statement

We know the algolia/react-element-to-jsx-string has been loosely maintained in the past few years as the primary maintainer has less time to take care of it. We have a fair number of bugs surfacing due to this dependency.

We've talked in the past about adopting it, but we also have an experimental code snippet replacement (@JReinhold if you could please link any issues on that).
