docs: update monitoring guide to use OpenTelemetry Collector Addon 
Updated the monitoring documentation to reflect the new approach using OpenTelemetry Collector Addon with Prometheus-Operator. Key changes include:
- Added architecture overview diagram showing hub and managed cluster setup
- Updated installation instructions to use the addon-contrib repository
- Added cluster selector variable to Grafana dashboard for multi-cluster monitoring
- Updated Prometheus queries to include cluster_name filter
- Refreshed Grafana dashboard screenshot with new UI
